Quick, Cheap and Healthy Recipes for the Road Warrior (Contest)

When you are on the road as much as most of us, eating the same bar and restaurant foods can become tiresome. Hell, the last thing I want to do after a long day of meetings and traveling is go out to eat….again. There is always room service but finding something that is actually healthy on those menu’s is few and far between. You might think that those 15 extra pounds aren’t noticed but those Chicken Fingers, Burgers and French Onion Soup are making your Brooks Brothers “Slim Fit” look more like an overfilled water balloon. Yea, I’m talking to you…..

I wanted to start a series of posts, dedicated to easy and healthy recipes that you can whip up in your room without a stove, oven or grill. I will start off with my Asian-Mediterranean Chicken of the Sea Wraps below.

For this recipe, I walked to the Supermarket a couple of blocks from the hotel I was staying at all of last week. I picked up the following:

1) Disposable Tupperware

2) 2 packs of Tuna in the Pouch. I used the Sweet and Spicy flavor for this recipe.

3) 1 Container of crumbled Feta Cheese.

4) 1 Container of Cocktail Peanuts

5) 1 Container of Cavender’s All Purpose Greek Seasoning

6) 1 Bottle of French’s Mustard. (You can always get mustard from the hotel as a cheaper option)

7) 1 Head of Hydroponic Butter Lettuce.

If it takes you longer than 5 minutes to make this then you have issues and probably should just order that Pizza.

Step 1) Open the two packages of Tuna and dump it into the Tupperware.

Step 2) Open the package of Feta and dump the container into the Tupperware.

Step 3) Add 5 dashes of Cavender’s All Purpose Greek Seasoning. This stuff is the bomb and makes anything taste better. It should be mandatory on all airlines with the crap they serve these days.

Step 4) Add 5 heaping spoonfulls of Peanuts.

Step 5) Add 4 heaping spoonfulls of mustard. This is more about helping the ingredients stick. If you are not a fan of mustard, you can substitute ranch dressing.

Step 6) Mix the ingredients in the bowl until it looks like this.

Step 7) Stuff your lettuce with your newly created goods. Now stuff your face.

Voila. Healthy, Cheap and Easy.

This will make about 16 lettuce wraps so 3-4 servings depending on how much of a pig you are.

The best part is you don’t have to go to the bar downstairs and listen to some blowhard tell the bartender his life story.

  1. Genius! Once I noticed how restaurants/room service every night was adding to my waistline, I started walking to Whole Foods from my hotel and eating from the build-your-own salad bar. I also picked up fruit and yogurt for the next morning (because club lounges are often pastry city!) and stored them in the ice bucket overnight (no fridge in my room!). It isn’t exactly cooking in your room, but it was a healthy option!

  2. I never travel without my electric tea kettle. One of my favorites is black beans and rice. In a large container with a lid. I add my minute rice 1 cup and a can of rinsed black beans. I add a cup of boiling water and put the lid on the container. Let stand for five to seven minutes. I add a single serve size of salsa to the mixture then serve. Makes two servings.

  3. great ideas! I travel a lot for work and usually bring oatmeal and also protein powder. I think I am going to add an electric travel kettle to my list (even w/ lounge access this would be nice- esp as a non coffee drinker- the in room coffee maker is usually a bit underwhelming) Look forward to hearing more ideas- I don’t always have access to a car or supermarket/convenience store- but these ideas are great!
