Another option for Category 7 Â hotel is Cash and Points, which will cost 15,000 points plus $275 per night, which can often be a better deal than redeeming with all points.

I’d argue your list is not very good.
To redeem a category 7 SPG in Bali is a terrible idea, considering Bali has so many luxury resorts for usually a very low paid rate. The Chatwal is also a terrible redemption since there are four Ws in NYC for a lower redemption. Also, the Chatwal is not a ultra-luxury property worthy of the Category 7 rating in my opinion.
You missed the obvious W Verbier (near $1000 a night throughout the year), the Hotel Wilson in Geneva (rated one of the top hotels in the world), and the Mystique in Santorini, known for it’s lack of availability due to year-round bookings.
