This is my second post in a series of covering healthy recipes that you can whip up in your Hotel Room without a stove, oven or grill. In Part I, Quick, Cheap and Healthy Recipes for he Road Warrior, I covered how in 5 minutes or less you can make Asian-Mediterranean Chicken of the Sea Lettuce Wraps.
For Part II, I utilize the microwave to make a high protein, low calorie, breakfast for day or night. I usually hit the gym for my daily run in the evening. Afterwards I like to load up on protein, and the following light meal hits all the buttons. Here is a brief rundown on how to make Spicy Mexican Scrambled Eggs and Cheese.
Again, all of these ingredients came from the local supermarket down the street from my hotel.
1) 2 Jumbo Eggs (Substitute 3 Jumbo Egg Whites for a lower calorie version.)
2) All Natural Fresh Spicy Pico De Gallo from the Refrigerated Produce Section
3) Sour Cream
4) Shredded Sharp Cheddar Cheese (Substitute Fresco Mexican Cheese for a lower calorie version)
5) Cavender’s All Purpose Greek Seasoning
6) Cholula Hot Sauce (This is another condiment that should be carried by all airlines to give their bland food a little help.)
7) Disposable Tupperware or Bowl
This meal should take you about 5 minutes.
Step 1) Add 4 scoops of the Pico de Gallo to your Bowl
Step 2) Add 1 scoop of Sour Cream on top of the Pico de Gallo in the Bowl.
Step 3) Heat the Pico and Sour Cream in the Microwave for 40 Seconds.
Step 4) Remove and stir.
Step 5) Crack 2 Eggs into the bowl and stir. This is where you can substitute 3 Egg Whites for a lower calorie version.
Step 6) Heat in the Microwave for 1 minute.
Step 7) Add Shredded Cheddar Cheese. Be as generous as you wish but realize that this is the highest calorie ingredient!
Step 8) Stir the Cheese, Eggs, Pico and Sour Cream.
Step 9) Heat 30 Seconds and Stir.
Step 10) Heat another 30 Seconds and Stir.
Step 11) Add the Cholula and Cavender’s. Eat up!
This recipe contains about 350 calories, 23 grams of protein and 2 grams of carbs as I made it. If you go for the egg white option it cuts the calorie count down to about 230 but the protein quantities also decrease. Cost is about $2-$3 per serving.
